When
cooking time arrives, meat, fish, seafood and the inevitable potato
are the favourite ingredients of the
Chilotas. In the restaurants
one finds barbecue, spareribs, seafood (an authentic seafood binge),
curanto en olla (meat and seafood cooked in a hole in the rock),
cazuela chilota (lamb meat with hog fat) and
chapapeles
(wheat flour dough to go with the
curanto, a famously appetizing
dish found all over the area).
Salmon also has its place in local
gastronomy.
Even though its appearance is of more recent origin (during the
90's), it is the favourite dish of the foreign tourists.
